At MODELLO we believe that true chocolate artistry begins at the source. Unlike conventional chocolate manufacturers, we meticulously oversee every step of the process, from carefully selecting the finest cocoa beans directly from the farms, to roasting, grinding, and tempering them in our own facility. This allows us to unlock the unique, nuanced flavors inherent in each bean, creating chocolate that is not just a confection, but a genuine culinary experience
Our Craft
The bean to bar journey typically begins with directly sourcing high quality cocoa beans from farms in Karnataka. As we are buying cacao direct from the farmer, we are able to cultivate a relationship with the farmers based on trust and foregoing any intermediaries who follow unethical practices. We work in close collaboration with the farmers to achieve the perfect amount of fermentation in Cocoa before it is dried.

The secret to exceptional chocolate lies in its origins. Our cocoa beans are sourced locally from a single farm in Karnataka, enabling us to maintain direct relationships with the farmers. This ensures not only superior quality cacao but also supports ethical and sustainable farming practices. By working closely with farmers, we foster a future where they thrive alongside our craft, creating a bond rooted in trust and mutual benefit.
From Bean to Bar
Once the beans arrive in the workshop, the first step is to remove any debris or defective beans. Next is roasting, a crucial step that develops the cocoa’s flavour and aroma. The beans are roasted at precise temperatures and durations, akin to coffee roasting, to bring out desirable notes. After roasting, the beans are cracked and winnowed.

The cocoa nibs are then fed into a melanger for 24-72 hours, sugar and sometimes additional cocoa butter, milk powder (for milk chocolate), or other flavourings are added. The refined chocolate is then tempered by hand over a granite slab. The tempered chocolate is then poured into moulds, allowed to cool and set, and finally, packaged into finished chocolate bars, ready for sale. Our chocolates are all made and tempered by hand in small batches, giving us control over each batch.
